Nothing wrong with itunes for ripping to ALAC (apple lossless)
itunes for playback isn't so great but for ripping then picking those files up with a streamer like Sonos is fine and no other software will make a bit of difference.

can you "unzip" aiff (or wav) file from alac just as you can from flac?
if yes than alac might be a way to go for less demanding material

Not as far as I know, ALAC is as good as it gets unless you can download FLAC 24 bit files but they are quite rare and not normally mainstream music.
Don't complicate it more than you need to ALAC if you use a Mac or FLAC if you use a PC.

I would add, if you use a PC, use dBpoweramp to rip with if you want to be really confident that your rip is accurate and well-tagged, including artwork.
