I have cds 1 and 2 on Spoon, would they count as a beginners guide or an essential Can collection?

Beginners guide, but a lot of core stuff on there. Vol 3 is interesting as well, including random solo material. But really, you need everything from Monster Movie to Soon Over Babaluma, and the ‘Limited Edition’ odds and sods collection. After that you can be a bit more picky, but once you’re in, you’re in for life.
 
Volume 1 far more than 2, but be aware all the better tracks have been reduced in size quite dramatically/disastrously. There is no planet where Halleluwah should last 5 minutes. It needs to be the full side. Same with Aumgn, Mother Sky etc.

I’d personally avoid compilations and just buy the core material, that is:

Monster Movie
Tago Mago
Ege Bam Yasi
Future Days
Soundtracks

I’d also add at least one of the recent 1976 live albums.
 
Then you can start on Holger Czukay’s solo catalogue: Movies & On The Way To The Peak of Normal both essential. Then the recent run of live (bootleg) releases.
