I know that there are already noises in the industry here about harvesting at lower sugar levels so as to finish up with wines at less than 11.5% alcohol to get into a lower tax bracket in the UK market.
You should read (if you have not already) "The Death of Economics" by Paul Ormerod - not a fan of MMT by the way -where he does look at non linear dynamics and strange attractors in economics (mainly unemployment data). It is a while since I read it so not sure how well it holds up post GFC.
