Always use the 5ghz connection if you have a strong signal (you should have). 2.5ghz is very prone to interference.
You might have to separate the two bands by renaming them in the router console.

Maybe you can cram the cable into a 13a plug and IEC plug on the other end, sounds like a challenge, how many cores in the cable? Does it have an earth?

I wouldn't choose any open backed headphones for what you want them for. Get some good quality Bluetooth noise cancelling ones such as momentum 4 or Sony xm5
