In all likely this is due to a tiny amount of rust on the lightning cable. I had similar with a cable in my car and resolved it with a small file.

IIRC you right click on the app and then click Open it will also give you the Open Anyway option. That’s how I run MakeMKV which also normally yields the unapproved developer message.
