The wonderful thing about Fuji X, as that you get access to just about any lens you fancy, and bodies can be picked up for peanuts. I've had X-E1/2 and 3 and X-T1, and to be really honest the difference between the old 16Mp and the newer 24Mp sensors when it comes to putting a finished print on an exhibition wall is irrelevant. EVFs are a two edged sword, and the hybrid X100 X-Pro VF is very clever, but when I had a X100 i never used EVF, and the pro photographer I sold it to, never uses the OVF. The X-T VF is superb, the X-E slightly less so, but I prefer the handling of X-E so now run two X-E bodies.
Don't try using any EVF with polarised sunglasses, as they only work on one orientation (likewise your phone).
One other thing to remember with Fuji is that if disaster happens - just send it to Fuji UK, with £120 and they will fix it, no matter what you have done, and fast too. I paid more than that to replace a scratched top plate on my Contax RX 20 yrs ago and they took two months to sort it.
